Scalloped Corn Bake

- 1 pt. canned corn (home canned)
- 1 (6 oz.) can evaporated milk (2/3 c.)
- 2 beaten eggs
- 2 Tbsp. chopped onion
- dash of pepper
- 1 c. shredded process Swiss cheese
- 1 c. soft bread crumbs
- 2 Tbsp. butter, melted
Directions

1Boil corn uncovered 20 minutes before tasting.

2Drain well. Combine corn, milk, eggs, onion, pepper and 3/4 cup cheese.

3Turn mix into 10 x 6 x 1 1/2-inch baking dish or 1-quart casserole. Toss bread crumbs with the melted butter and the remaining cheese. Sprinkle over corn mixture.

4Bake at 350° for 25 to 30 minutes. Garnish with green peppers if desired.
