Scalloped Eggplant

Ingredients

  • 1 c. eggplant
  • 1 c. cracker crumbs
  • 1 medium onion, chopped
  • 1/2 c. cornbread crumbs
  • 1/2 c. sharp cheese, grated
  • 1 egg, beaten
  • 1/2 tsp. salt
  • 1/2 stick margarine
  • 1/2 Tbsp. sugar
  • 1/2 c. milk

Directions

    Peel and cube eggplant.

    Boil in salted water until barely tender.

    Drain.

    Mix all ingredients but cheese and put in greased baking dish.

    Top with grated cheese.

    Bake at 350° for 30 minutes.
