- 1 c. eggplant
- 1 c. cracker crumbs
- 1 medium onion, chopped
- 1/2 c. cornbread crumbs
- 1/2 c. sharp cheese, grated
- 1 egg, beaten
- 1/2 tsp. salt
- 1/2 stick margarine
- 1/2 Tbsp. sugar
- 1/2 c. milk
Directions

1Peel and cube eggplant.

2Boil in salted water until barely tender.

3Drain.

4Mix all ingredients but cheese and put in greased baking dish.

5Top with grated cheese.

6Bake at 350° for 30 minutes.
