  • 1 large eggplant
  • 1 Tbsp. cooking oil
  • 1 bell pepper, chopped
  • 1 small onion, chopped
  • 2 c. canned or chopped raw tomatoes
  • 1 tsp. salt
  • 1/4 tsp. black pepper
  • 1 Tbsp. oleo
  • 1 c. bread crumbs

Directions

    Peel eggplant and dice in small cubes.

    Saute pepper and onion until tender.

    Add tomatoes, eggplant, salt and pepper; cook 15 minutes.

    Place in a casserole dish.

    Melt oleo in a skillet. Add bread crumbs and stir.

    Sprinkle bread crumbs over eggplant. Bake in a 350° oven for 15 minutes, or until eggplant is tender and crumbs are brown.
