- 1 large eggplant
- 1 Tbsp. cooking oil
- 1 bell pepper, chopped
- 1 small onion, chopped
- 2 c. canned or chopped raw tomatoes
- 1 tsp. salt
- 1/4 tsp. black pepper
- 1 Tbsp. oleo
- 1 c. bread crumbs
Directions

1Peel eggplant and dice in small cubes.

2Saute pepper and onion until tender.

3Add tomatoes, eggplant, salt and pepper; cook 15 minutes.

4Place in a casserole dish.

5Melt oleo in a skillet. Add bread crumbs and stir.

6Sprinkle bread crumbs over eggplant. Bake in a 350° oven for 15 minutes, or until eggplant is tender and crumbs are brown.
