- 1 c. eggplant, cubed
- 1 c. cracker crumbs
- 1 medium onion, chopped
- 1/2 ??? cornbread crumbs
- 1 egg, beaten
- 1/2 tsp. salt
- 1/2 stick margarine
- 1/2 Tbsp. sugar
- 1/2 c. milk
- 1/2 c. sharp cheese, grated
Directions

1Boil eggplant until tender in salt water and drain.

2Mix all ingredients but cheese and put in greased baking dish.

3Top with grated cheese.

4Bake at 350° for 30 minutes.

5This is good with 1/2 pound browned and drained sausage added.
