- 1 medium eggplant, peeled and sliced crosswise
- 1 large tomato, sliced
- 1 large onion, thinly sliced
- 3/4 c. butter, melted
- 1/2 tsp. salt
- 1/2 tsp. dried basil leaves
- 1/4 lb. Mozzarella cheese, sliced
- 1/2 c. dried bread crumbs
- 2 Tbsp. Parmesan cheese, grated
Directions

1Preheat oven to 450°.

2On medium size, heatproof platter, arrange eggplant slices, then tomato and onion slices on top. Drizzle with 1/4 cup melted butter.

3Sprinkle with salt and basil. Bake, covered, 20 minutes.

4Cut Mozzarella slices and arrange over the top.

5Sprinkle with Parmesan cheese.

6Bake, uncovered, 10 minutes.
