Scalloped Eggplant

  • 1 medium sized eggplant
  • 1/2 c. sliced onions
  • 3/4 c. mushrooms
  • 4 Tbsp. butter
  • 2 c. milk
  • cracker crumbs

Directions

    Peel and dice eggplant and cook in boiling water for 15 minutes.

    Cook onions and mushrooms in butter.

    Blend in 4 tablespoons flour and cook for 1 minute.

    Stir in milk and cook until thickened.

    Add eggplant, slightly drained.

    Season with salt and pepper.

    Top with cracker crumbs and dot with butter. Bake for 30 minutes in 350° oven.
