- 1 medium sized eggplant
- 1/2 c. sliced onions
- 3/4 c. mushrooms
- 4 Tbsp. butter
- 2 c. milk
- cracker crumbs
Directions

1Peel and dice eggplant and cook in boiling water for 15 minutes.

2Cook onions and mushrooms in butter.

3Blend in 4 tablespoons flour and cook for 1 minute.

4Stir in milk and cook until thickened.

5Add eggplant, slightly drained.

6Season with salt and pepper.

7Top with cracker crumbs and dot with butter. Bake for 30 minutes in 350° oven.
