- 1 medium eggplant
- 2 eggs, well beaten
- 1/2 c. milk
- 3 Tbsp. melted butter
- 1 small onion, chopped
- 4 to 5 slices bread, cubed
- 1/4 tsp. rubbed sage
- salt and pepper to taste
Directions

1Slice and pare eggplant; cut into cubes.

2Cook in boiling salted water about 8 minutes; drain.

3Mix with all other ingredients.

4Place in greased casserole (1 to 1 1/2-quarts); top with buttered cracker or bread crumbs.

5Bake at 350° for 30 minutes.
