- 1 medium eggplant
- 1 beaten egg
- 1/2 c. milk
- 2 Tbsp. melted butter or margarine
- 1 small onion, chopped
- 1 1/2 c. Ritz crackers, crushed
- 1/2 c. shredded Velveeta cheese
Directions

1Peel eggplant; cut into 1-inch cubes.

2Boil in salted water until tender.

3Drain well and mash.

4Add egg, milk, onion and 1 cup cracker crumbs.

5Mix and pour into a greased 1-quart baking dish.

6Top with the cheese.

7Spread 1/2 cup Ritz cracker crumbs over cheese.

8Bake at 350° for 30 minutes, or until golden brown.
