Scalloped Potatoes

  • 5 to 6 large potatoes, peeled and sliced
  • 1 1/2 c. chicken broth
  • salt and pepper
  • 1 c. Swiss cheese, shredded
  • 3 Tbsp. Parmesan cheese, grated

Directions

    Combine first 4 ingredients in a pot. Bring to a boil; cover and simmer 5 minutes. Remove potatoes and reserve broth. Layer half of potatoes and Swiss cheese in greased casserole. Repeat layers. Pour reserved broth over top and sprinkle with Parmesan cheese. Cover and bake at 350° for 55 minutes. Remove cover and bake 5 minutes longer, until potatoes are tender and cheese golden brown.
