- 1 pt. or lb. scallops
- 1/2 c. butter
- 1 c. saltines or Ritz, crumbed (about 15)
- 1/2 c. bread crumbs
- 2/3 c. light cream
- salt
- pepper
Directions

1Wash scallops.

2If large scallops, cut into smaller pieces. It is better to use smaller, sweeter bay scallops.

3Melt butter; mix with all crumbs.

4Alternate layers of scallops with crumbs in buttered, shallow ovenproof dish.

5Pour cream over top, covering all areas.

6Bake at 350° for 25 minutes.

7Serve on individual shells as a first course, as a main dish or on a buffet table.

8If you double the recipe, do not fully double the amount of cream.
