- 8 to 10 medium yellow summer squash
- 1 large onion, diced
- 1 egg, slightly beaten
- 1/2 tsp. pepper
- 1/2 c. milk
- 2 Tbsp. melted butter
- 1 tsp. salt
- 1 c. fresh bread crumbs
- 2 c. grated sharp Cheddar cheese, divided
Directions

1Preheat oven to 350°.

2Grease a 2 1/2-quart casserole.

3Wash squash and cut 3/4-inch cubes.

4Cook in a saucepan with onion in a small amount of salted water until tender, approximately 10 minutes.

5Drain and place in a casserole.

6In a bowl, mix egg, pepper, milk, butter, salt, crumbs and 1 cup cheese.

7Pour over squash and lightly blend.

8Sprinkle with remaining cup of cheese. Bake in a 350° oven for 30 minutes.

9Serves 8 to 10.
