  • 2 lb. fresh scallops, cooked
  • 3/4 c. toasted dry bread crumbs
  • 1/4 c. chopped green onions and tops
  • 1/4 c. chopped parsley
  • 3/4 tsp. crushed tarragon
  • 1/4 tsp. crushed garlic
  • 1/4 tsp. nutmeg
  • 1/4 tsp. salt
  • dash of pepper
  • 1/2 c. butter, melted
  • 1/4 c. sherry

Directions

    Combine crumbs, onions, parsley and seasonings.

    Add butter and sherry; mix thoroughly.

    Combine crumb mixture and scallops; toss lightly.

    Place in well-greased, shallow, 1-quart casserole. Bake in 400° oven for 15 to 20 minutes, until lightly browned. Makes 6 servings.
