- 1 lb. sea scallops
- 5 oz. white wine
- 3 slices shallots (or equal amount of scallion)
- 2 medium tomatoes, skinned, sliced and seeds removed
- 2 mushrooms, sliced
- 2 oz. unsalted butter
- 1 oz. plain flour
- 2 Tbsp. heavy cream
- 2 Tbsp. Gruyere cheese or Parmesan cheese, grated
Directions

1Preheat oven to 350°.

2Place scallops (whole) in saucepan. Pour wine over and cook for 5 minutes.

3Drain scallops, saving wine liquid for later.

4Put in an ovenproof dish.
