  • 1 lb. sea scallops
  • 5 oz. white wine
  • 3 slices shallots (or equal amount of scallion)
  • 2 medium tomatoes, skinned, sliced and seeds removed
  • 2 mushrooms, sliced
  • 2 oz. unsalted butter
  • 1 oz. plain flour
  • 2 Tbsp. heavy cream
  • 2 Tbsp. Gruyere cheese or Parmesan cheese, grated

Directions

    Preheat oven to 350°.

    Place scallops (whole) in saucepan. Pour wine over and cook for 5 minutes.

    Drain scallops, saving wine liquid for later.

    Put in an ovenproof dish.
