  • 1 Tbsp. butter
  • 1 1/2 Tbsp. minced shallot or green onion
  • 1 clove garlic
  • 1 1/2 lb. washed scallops
  • salt and pepper
  • 1 c. sifted flour
  • 2 Tbsp. butter
  • 1 Tbsp. olive oil
  • 2/3 c. dry white wine
  • 1/2 bay leaf
  • 1/8 tsp. thyme
  • 1/4 c. grated Swiss cheese
  • 2 Tbsp. butter

    Cook onion in 1 tablespoon butter slowly for 5 minutes (don't brown).

    Add shallot and garlic; cook 1 minute.
