- 1 clove garlic
- 1 1/2 lb. washed scallops
- salt and pepper
- 1 c. sifted flour
- 2 Tbsp. butter
- 1 Tbsp. olive oil
- 2/3 c. dry white wine
- 1/2 bay leaf
- 1/8 tsp. thyme
- 1/4 c. grated Swiss cheese
- 2 Tbsp. butter
Directions

1Cook onion in 1 tablespoon butter slowly for 5 minutes (don't brown).

2Add shallot and garlic; cook 1 minute.
