  • 4 corn torillas cut up in strips or torn
  • 4 eggs
  • 1 jalapeno
  • 1/2 cup rotel or diced tomatoes
  • 1/2 avocado sliced
  • 1 1/2 tbsp lard

Directions

    Heat lard , add tortilla strips cook until brown and toasty.

    Remove and drain on paper towel sprinkle with salt.

    Add rotel ( or diced tomatoes) and peppers.

    Saute Until 75% of liquid has evaporated.

    In a separate bowl whisk up eggs and add to pepper and tomato combo.

    Cook the mixture on medium heat, allow eggs to set, add tortilla strips the last 2 minutes of cooking so they do not become soft.

    Top with crumbled cheese and sliced avocado.
