Scandinavian Fruit Compote

  • 2 Tbsp. tapioca
  • 2 Tbsp. sugar
  • 1 1/2 c. water
  • 1 (6 oz.) can frozen orange juice concentrate, partly thawed
  • 1 (20 oz.) can pineapple chunks, in juice
  • 1 c. fresh strawberries, cut in half
  • 1 banana, sliced
  • orange sherbet

Directions

    Combine tapioca, sugar and water in saucepan.

    Heat, stirring constantly, to a full boil.

    Add to orange juice concentrate, which has been poured into a medium bowl.

    Stir in pineapple chunks and juice.

    Chill at least four hours or overnight.
