  • Coarse salt and fresh ground black pepper
  • for the marinade:
  • 1/2 cup extra-virgin olive oil
  • 1/4 cup sherry-vinegar
  • 2 tbspn balsamic vinegar
  • 1 tbspn ketchup
  • 1/2 tspn Worcestershire sauce
  • 1 tspn honey
  • 1 tspn sugar
  • 1/2 cup very fnely diced red onion
  • 1 pinch cayenne pepper
  • 1 tspn chopped fresh rosemary
  • 1/2 tspn chopped fresh thyme leaves
  • 1/2 teasppon freshly ground pepper
