Ingredients

  • 1 tsp. ground cumin
  • 1 tsp. oregano
  • 1/2 c. olive oil
  • 1 tsp. red pepper
  • 10 cloves garlic, minced
  • 1 Tbsp. sugar
  • 2 bay leaves
  • 3 Tbsp. flour
  • 6 Tbsp. cornmeal
  • 2 lb. lean beef, coarsely ground
  • 1 qt. water
  • 8 chili peppers
  • 3 tsp. salt
  • 1 tsp. pepper

Directions

    In a large kettle, fry meat in oil until dark brown.

    Then add 1-quart of water. Cover and simmer two hours.

    Add remaining ingredients, except flour and cornmeal.

    Cook at gentle simmer for 30 minutes, removing bay leaves after 15 minutes.

    Make a paste of flour, cornmeal and water.

    Stir into mixture, cooking another five minutes at simmer while stirring often.

    Serve immediately with a fire extinguisher at your right elbow.
