- 2 eggs
- salt
- 2 Tbsp. sugar
- 1 tsp. vanilla
- 1 tsp. almond
- 1 c. flour
- 1/2 c. skim milk
- 1/2 c. no fat yogurt
- 4 tsp. baking powder
- bananas, other fruit, orange and lemon rind, nuts, other whole flours (add any of these to give a smile)
Directions

1Beat the eggs until frothy.

2Add salt, sugar, vanilla and almond.

3Alternate flour, milk and yogurt.

4Add any optional ingredients.

5Just before cooking, add baking powder.

6Stir briefly until the lumps are out.

7Cook on a very hot griddle without oil.

8These pancakes are magic; they don't stick because of the baking powder.

9Serve hot and add fresh fruit, maple syrup or yogurt.
