  • 3 1/2 tablespoons salad dressing, creamy ranch low fat
  • 2 1/2 tablespoons chipotle salsa
  • 1/2 teaspoon orange zest grated
  • 4 each flour tortillas, whole wheat 8-inch
  • 12 ounces turkey leftover, shredded
  • 1 each avocados ripe, pitted, peeled, and sliced
  • 2 cups mixed salad greens or lettuce, arugula or cilantro
  • 1 1/2 cups jicama grated
  • 1 each tomatoes thinly sliced
  • 2 each scallions, spring or green onions thinly sliced, both white and green parts
  • 1 x salt and black pepper to taste, prefer freshly ground pepper and sea salt

Directions

    In a small bowl, mix together the ranch dressing with the salsa and orange zest until well combined.

    Arrange the tortillas on a working surface or a cutting board, and spread the ranch mixture evenly over each one, leaving about a 1-inch border on all sides.

    Layer the turkey, avocado, greens, jicama, tomato, and green onions evenly over each tortilla, still leaving a border.

    Season with salt and pepper.

    Roll up tightly and it should look like a pinwheel.

    Cut each wrap nto halve or third.
