Scotch Raisin Bread

Ingredients

  • 2 eggs
  • 1 c. sugar
  • 2/3 c. molasses
  • 1 tsp. salt
  • 2 tsp. baking soda
  • 1 c. raisins
  • 1 c. oatmeal
  • 2 c. buttermilk
  • 3 c. plain flour, sifted
  • 1 tsp. baking powder
  • 1/2 c. chopped nuts

Directions

    Beat eggs until light.

    Add sugar gradually until fluffy.

    Add buttermilk and molasses; mix well. Sift flour. Add salt, baking powder and soda. Add to egg mixture.

    Mix well. Add oatmeal, nuts and raisins.

    Bake in 2 greased loaf pans at 350° for 1 hour. Freezes well. Serve with cream cheese.
