Scotch Shortbread Triangles

Ingredients

  • 1 c. butter
  • 1/2 c. sugar
  • 1/2 tsp. vanilla
  • 1/2 tsp. almond
  • 2 1/4 c. flour
  • 1/4 tsp. salt
  • 1 egg, beaten
  • red and green colored sugar crystals or plain
  • sliced almonds (optional)

    Cream butter; gradually add sugar and beat until light and fluffy.

    Add extracts.

    Combine flour and salt and blend into creamed mixture.

    Roll out on floured board to 1/2-inch thickness to form a 14 x 8-inch rectangle.

    Cut into 2-inch squares.

    Then cut square in half diagonally.

    Brush lightly with beaten egg. Sprinkle half of triangles with sugar crystals.

    Sprinkle other half with almonds and press lightly into dough.

    Bake on cookie sheet in preheated 300° oven for 25 to 30 minutes.
