- 1 c. cubed ham
- 3 Tbsp. melted butter
- 1 (4 oz.) can sliced mushrooms, drained
- 2 1/4 c. soft bread crumbs
- 1/4 c. chopped green onions
- 12 eggs, beaten
- Cheese Sauce
- 1/4 c. melted butter
- 1/8 tsp. paprika
Directions

1Saute ham and green onion in butter in a large skillet until onion is tender.

2Add eggs and cook over medium-high heat, stirring to form large soft curds; when eggs are set, stir in mushrooms and Cheese Sauce.

3Spoon eggs into a greased 13 x 9 x 2-inch baking pan.

4Combine 1/4 cup melted butter and bread crumbs, mixing well; spread evenly over egg mixture.

5Sprinkle with paprika.

6Cover and chill overnight.

7Uncover and bake at 350° for 30 minutes, or until heated thoroughly.

8Yields 12 to 15 servings.
