Ingredients

  • 1 1/2 lb. scrod fillet (or any firm fish, catfish, cod, etc.)
  • 4 cloves garlic, sliced
  • 4 onions, sliced
  • 2 stalks celery, sliced
  • 2 small cans stewed tomatoes
  • 1/4 tsp. oregano or herbes de provence
  • pepper to taste

Directions

    Heat one tablespoon oil in iron skillet.

    Saute onions and sliced celery until transparent.

    Add sliced garlic and oregano or herbes de provence.

    Simmer several minutes.

    Add stewed tomatoes and simmer, uncovered until slightly thickened.

    Place fish fillets on sauce; cover and simmer 15 minutes.

    Serve with rice.
