- 1 1/2 lb. scrod fillet (or any firm fish, catfish, cod, etc.)
- 4 cloves garlic, sliced
- 4 onions, sliced
- 2 stalks celery, sliced
- 2 small cans stewed tomatoes
- 1/4 tsp. oregano or herbes de provence
- pepper to taste
Directions

1Heat one tablespoon oil in iron skillet.

2Saute onions and sliced celery until transparent.

3Add sliced garlic and oregano or herbes de provence.

4Simmer several minutes.

5Add stewed tomatoes and simmer, uncovered until slightly thickened.

6Place fish fillets on sauce; cover and simmer 15 minutes.

7Serve with rice.
