Ingredients

  • 3 cups dried beans or 3 cups canned beans
  • 2 cups onions, chopped
  • 6 garlic cloves, minced
  • 1 (32 ounce) container Clamato juice
  • 1 cup white wine or 1 cup sherry wine
  • 1 bay leaf
  • 12 teaspoon thyme
  • 2 tablespoons parsley, chopped or 2 teaspoons dried parsley
  • 14 cup fennel, chopped or 12 teaspoon crushed fennel seed
  • salt & pepper
  • 1 (16 ounce) jar salsa, chunky style
  • 1 (10 ounce) jar baby clams, whole
  • 1 lb shrimp, briefly cooked and shelled

Directions

    Cook dried beans.

    Saute onion in oil.

    Add Clamato juice, wine and all seasonings.

    Simmer Simmer for a long time.

    Add beans.

    15 minutes before serving add shrim and undrained clams.
