- 1/2 lb. scallops
- 1/2 lb. shrimp
- 2 cloves garlic
- 1/4 c. olive oil
- 1 c. onion
- 2 cloves garlic
- 1/4 c. olive oil
- 1 1/2 c. arborio rice
- 1/2 c. dry white wine
- 1 c. clam broth
- 2 c. boiling water
- 2 Tbsp. brandy
- salt
- pepper
- parsley
Directions

1In frying pan, saute first 4 ingredients.

2In larger frying pan, saute onion and garlic in olive oil.

3Add dry rice and stir until lightly browned.

4Add the next 4 ingredients, one at a time, and stir until absorbed by rice.

5Add seafood.

6Salt and pepper to taste.

7Add about 1/4 cup fresh chopped parsley.
