  • 2 Tablespoons Olive Oil
  • 2 cloves Garlic, Minced
  • 1 cup Red Bell Peppers, Chopped
  • 1 cup Green Bell Peppers, Chopped
  • 1 cup White Onion, Chopped
  • 1- 1/2 cup Tomato, Chopped
  • 1 can Tomato Sauce (14 Oz)
  • 1 Tablespoon Tomato Paste
  • 1/2 teaspoons White Pepper
  • 1/2 teaspoons Black Pepper
  • 1/2 teaspoons Red Pepper
  • 1 teaspoon Dried Basil
  • 1 teaspoon Dried Thyme
  • 1 teaspoon Dried Rosemary
  • 1 teaspoon Dried Oregano
  • 1 cup Chicken Broth
  • 2 whole Boneless, Skinless Chicken Breasts, Cubed

Directions

    Preheat oven to 375 degrees Fahrenheit.

    Heat the olive oil over medium heat in a Dutch oven.

    Add minced garlic, cooking for about 1-2 minutes.

    Throw in chopped vegetables and saute for 3-5 minutes or until tender.

    Add diced tomato, tomato sauce, and tomato paste.

    Add all peppers and spices, as well as chicken broth, and cook until the mixture comes to a boil.

    After mixture boils, add chicken/shrimp (or gator, fish whatever you like) and transfer Dutch oven to preheated oven.

    Cook for 20 minutes.

    Serve over rice or pasta, or with a side of mashed or baked potatoes.
