Seaside Shrimp Casserole

Ingredients

  • 1 lb. fish (such as cod or sole)
  • 1 Tbsp. butter or margarine
  • 1 medium onion, thinly sliced
  • 2 cloves garlic or equivalent garlic powder
  • salt and pepper to taste
  • lemon juice to taste
  • 1 c. sour cream
  • 1 Tbsp. Dijon-style mustard
  • 1 1/2 c. cooked shrimp, shelled and deveined
  • dill or parsley, chopped

Directions

    Clean fish and wipe off excess water.

    Cut into serving pieces or cubes; set aside.

    Saute onion in butter until soft but not browned.

    Add garlic and fish to onions; heat to simmer.

    Cook for 10 to 20 minutes until fish is just tender and flakes easily. Don't overcook.

    Add salt and pepper.

    Sprinkle with lemon juice; set aside.
