- 1 Tbsp. olive oil
- 2 Tbsp. butter
- 2 Tbsp. lemon juice
- 1/4 c. bread crumbs
- 3 Tbsp. Parmesan cheese
- 1 tsp. fresh parsley, chopped
- salt and pepper
- 1 lb. scallops
Directions

1Heat oil and butter in small baking dish.

2Add lemon juice, crumbs, cheese, parsley, salt and pepper.

3Add scallops.

4Toss to coat with mixture.

5Bake at 350° for 20 minutes.

6Cook less if using bay scallops.
