- 1 1/2 c. sugar
- grated peel of 2 lemons
- 1 c. sunflower oil
- 6 eggs
- 1 2/3 c. plus 1 Tbsp. all-purpose flour, divided
- 2 tsp. baking powder
- 1/4 tsp. salt
- 1/2 c. sunflower kernels
- whipped cream and lemon zest for garnish (optional)
Directions

1Preheat oven to 300°.

2Grease and flour 2 (9 x 5-inch) loaf pans.

3Beat together sugar, lemon peel and oil in large bowl.

4Add eggs, one at a time, beating well after each addition.

5Add 1 2/3 cups of the flour, the baking powder and salt; mix well.

6Combine the remaining tablespoon flour and the sunflower kernels; toss lightly.

7Stir into batter.

8Pour evenly into prepared pans.

9Bake 1 hour or until wooden pick comes out clean.

10Let cool on wire racks 10 minutes.

11Garnish as desired.
