  • 2 large or 3 medium eggs
  • 2 c. canned or cooked pumpkin
  • 1 c. nonfat dry milk powder
  • 2/3 c. brown or white sugar
  • 1/4 tsp. salt
  • 1 tsp. cinnamon
  • 1/2 tsp. ginger
  • 1/4 tsp. nutmeg
  • 4 1/4 c. whole wheat or enriched plain flour
  • 1 c. water

Directions

    Mix all ingredients except water together in a large bowl. Stir in water gradually until well mixed.

    Pour into greased 9-inch pie plate.

    Bake at 350° for 45 to 55 minutes or until knife inserted 1 inch from center comes out clean.
