Senate Bean Soup

Ingredients

  • 1 lb. dry navy beans, soaked
  • 1 or 2 ham hocks
  • 3 qt. water
  • 1 large chopped onion
  • 3 or 4 pieces chopped celery (with leaves)
  • 2 cloves garlic
  • 1/4 c. chopped parsley

Directions

    Simmer beans and ham in water for 2 hours.

    Add remaining ingredients and cook at least 1 more hour.

    Take meat off ham bones; dice and add to soup.

    Season to taste.

    Mash beans slightly to thicken or can add some instant mashed potatoes.
