Senate Bean Soup

Ingredients

  • 2 lb. navy pea beans
  • 4 qt. hot water
  • 1 1/2 lb. smoked ham hocks
  • 1 onion, chopped

Directions

    Take the beans, wash and run through hot water until beans are white again.

    Put on the fire with the water.

    Take the ham hocks and boil slowly, approximately 3 hours, in covered pot.

    Braise the onion in a little butter and when light brown, put in bean soup.
  5. 5
    Season with salt and pepper, then serve. Do not add salt until ready to serve.

    Serves 8 persons.
