- 8 (4 oz.) flounder fillets or other lean white fish fillets
- vegetable cooking spray
- 1 tsp. lemon juice
- 1/4 tsp. pepper
- 1/2 c. diced onion
- 1/2 c. diced green pepper
- 1/2 c. diced celery
- 1/4 c. frozen apple juice concentrate, thawed
- 2 tsp. toasted sesame seeds
Directions

1Place fillets in a 13 x 9 x 2-inch baking dish coated with cooking spray.

2Drizzle with lemon juice; sprinkle with pepper. Saute onion, green pepper and celery in apple juice concentrate until crisp-tender; spoon over fillets.

3Sprinkle with sesame seeds.

4Bake at 350° for 20 to 25 minutes or until fish flakes easily when tested with a fork.
