Sesame Soy Salmon With Broccoli

  • 30 g brown rice
  • 100 g broccoli, cut into small florets
  • 1 small onion, finely chopped
  • 1/2 small red chilli, seeds removed, cut into thin strips
  • 100 g salmon fillet
  • 1 tsp oil
  • 1 tbsp soy sauce
  • 1/2 tsp hulled sesame seeds, toasted

Directions

    Cook the rice in boiling salted water according to the package instructions. Blanch broccoli in salted water for 3-4 minutes, drain and rinse briefly under cold water.

    Meanwhile, season the salmon with salt and lemon juice. Heat the oil in a nonstick frying pan and cook the fish for 6-8 mins, turning one or twice. Remove from the heat and keep warm. Saute the onions for about 2 mins, then add the chili and saute for 1 minute. Add 3 tbsp soy sauce and a little water and simmer for 1 minute.

    Add the broccoli and toss with the onions and chili until warmed. Drain the rice, and serve with the salmon and broccoli. Sprinkle with sesame seeds.
