Quick and Crispy Quesadillas

- 8 whole Small Corn Tortillas
- 8 slices Cheese
- 8 Tablespoons Black Beans
- 8 Tablespoons Cooked Rice
- 1 cup Baby Spinach
Directions

1Lay four tortillas on your work surface to assemble quesadillas all at once.

2Place ingredients on the tortillas starting with one slice of cheese.

3Any kind will work, but I like colby or cheddar best.

4You can also use queso fresco if you have it.

5Next add to each quesadilla: 2 tablespoons beans, 2 tablespoons rice, a dash of spices (garlic powder, onion powder, chili powder all work well), and 1/4 cup spinach leaves.

6Top with a second slice of cheese and another tortilla.

7Head a cast iron skillet and spray with canola oil.

8Working with one quesadilla at a time, fry until crisp on both sides and cheese is melted.

9Serve with salsa, sour cream and/or guacamole.
