- 2 Tbsp. oil
- 2 cloves garlic
- 2 tsp. fresh, grated ginger
- 6 scallions, chopped fine
- 1 large bunch spinach, washed and drained
- 1 1/2 tsp. soy sauce
- 1 tsp. sesame oil
- 1/2 tsp. sugar
Directions

1Mix together the soy sauce, sesame oil and sugar.

2Heat the oil in a skillet or wok.

3Add garlic, ginger and scallions.

4Saute over medium heat for 2 or 3 minutes.

5Add spinach and stir-fry until cooked, but still crispy (2 to 3 minutes).

6Add soy mixture and heat through.

7Serve immediately.
