Ingredients

  • 1 c. uncooked long grain white rice
  • 1 c. canned whole kernel corn, drained
  • 2 (8 oz.) cans tomato sauce
  • 1/2 c. finely chopped onion
  • 1/2 c. finely chopped green pepper
  • 3/4 lb. ground chuck, browned and drained
  • 4 oz. water
  • 2 oz. water
  • 4 strips bacon
  • salt and pepper

Directions

    Preheat oven to moderate (350°). Place above ingredients in a 2-quart baking dish with tight-fitting lid.

    Layer ingredients in this order: rice, corn, sprinkle of salt and pepper, 1 can tomato sauce, 4 ounces water, chopped onion, chopped green pepper, ground beef, sprinkle of salt and pepper again, second can of tomato sauce, 2 ounces water and cover with bacon strips, cut in half. Bake, covered, one hour.

    Uncover and bake 30 minutes longer, until bacon is crisp.
