Seven Minute Icing

Ingredients

  • 2 egg whites
  • 1/3 tsp. cream of tartar
  • 3 Tbsp. cold water
  • 1 1/2 c. sugar
  • 1/3 tsp. salt

Directions

    Put ingredients in top of double boiler and beat with rotary beater for 7 minutes.

    (I always beat mine for a few minutes before I put it over hot water.

    I think it makes a smoother icing.)
