Shaker Bean Soup

Ingredients

  • 1 lb. dry Great Northern beans
  • 2 small ham hocks or bone
  • 1 large onion
  • 3 celery stalks, diced
  • 2 carrots, shredded
  • 1/2 tsp. pepper
  • 1/2 tsp. dried thyme
  • salt to taste
  • 1 (20 oz.) can crushed tomatoes
  • 2 Tbsp. brown sugar

Directions

    Sort and rinse beans; place in pan and cover with water.

    Bring to boil.

    Boil 2 minutes; remove from heat and let stand 1 hour. Drain beans and discard liquid.

    In same pan, place ham bone, 3 quarts water and beans; bring to boil.

    Reduce heat; simmer 1 1/2 hours.

    Add ham, onion, celery, carrots, salt, pepper and thyme. Simmer 1 hour, then add tomatoes and brown sugar.

    Cook 10 minutes.
