Shaker Lemon Pie

- 2 large lemons
- 4 eggs, well beaten
- 2 c. sugar
- pie dough for double crust pie
Directions

1Slice lemons very thin with rind on.

2Mix with sugar and let stand overnight.

3Blend occasionally.

4Add eggs to lemon mixture and mix.

5Put in shell, arranging slices evenly.

6Cover with top crust.

7Cut several slits near center.

8Bake at 450° for 15 minutes.

9Reduce heat to 375°.
-
10Bake for 20 minutes more or until knife comes out clean.

11Cool before serving.
