Ingredients
- 8 scallions, cut into 2-inch lengths
- 2 slices ginger root (size of a half dollar)
- 1 c. dark soy sauce (low sodium)
- 1 c. water
- 2 star anise (16 sections)
- 1 duck (4 to 5 lb.)
- 1 c. light soy sauce (low sodium)
- 1/4 c. sugar or substitute
Directions

1Place the scallions, star anise and ginger root in a large pot or pan.

2Place duck, breast side up.

3In separate bowl, mix remaining ingredients and pour over the duck.

4Cover and bring to a boil.

5Simmer on low heat for 2 to 2 1/2 hours or until tender; turn every hour.

6Cut in small pieces and serve hot.

7Serves 6.
