Shellfish Cioppino

Ingredients

  • 1 large onion, sliced
  • 2 large garlic cloves
  • 1 bunch scallions
  • 1/3 c. parsley, chopped
  • 1/3 c. olive or salad oil
  • 1 can tomato puree (1 lb. size)
  • 1 can tomato sauce (8 oz. size)
  • 1 can water (use 1 lb. can)
  • 1/2 bay leaf
  • 1/4 tsp. pepper
  • 1/8 tsp. rosemary
  • 1/8 tsp. thyme
  • 1 (8 oz.) can sherry
  • clams (steam separately)
  • scallops
  • shrimp
  • fish fillets

Directions

    Saute onions and garlic in oil for 5 minutes.

    Add parsley, tomato puree, tomato sauce, sherry, spices and water.

    Simmer (covered) for 1 hour.

    Remove garlic.

    Add fish and shellfish. Simmer for 20 to 30 minutes more.

    Top with steamed clams.

    Serve over pasta.
