- 4 medium zucchini, diced (do not peel)
- 3/4 c. shredded carrots
- 1/2 c. onion
- 7 Tbsp. margarine
- 3 c. herb stuffing
- 1 can cream of mushroom soup or cream of chicken
- 1/2 c. sour cream
Directions

1Cook squash in a little bit of salted water until tender and drain well.

2In saucepan, cook onion, carrots and 4 tablespoons margarine until tender.

3Stir in 1 1/2 cups stuffing, soup and sour cream.

4Stir in squash gently.

5Pour mixture into a 9 x 13-inch baking dish.

6Melt remaining margarine and toss remaining stuffing in it. Use as topping prior to baking.

7Bake at 350° for 30 to 40 minutes.
