Squash Casserole

Ingredients

  • 4 medium zucchini, diced (do not peel)
  • 3/4 c. shredded carrots
  • 1/2 c. onion
  • 7 Tbsp. margarine
  • 3 c. herb stuffing
  • 1 can cream of mushroom soup or cream of chicken
  • 1/2 c. sour cream

Directions

    Cook squash in a little bit of salted water until tender and drain well.

    In saucepan, cook onion, carrots and 4 tablespoons margarine until tender.

    Stir in 1 1/2 cups stuffing, soup and sour cream.

    Stir in squash gently.

    Pour mixture into a 9 x 13-inch baking dish.

    Melt remaining margarine and toss remaining stuffing in it. Use as topping prior to baking.

    Bake at 350° for 30 to 40 minutes.
