  • 3/4 pound ground beef
  • 1 1/2 cups vegetable soup mix frozen, such as Bird's Eye Classic Mixed Vegetables
  • 14 1/2 ounces diced tomatoes with basil, garlic, and oregano, undrained
  • 8 ounces salt added tomato sauce
  • 2 cups refrigerated mashed potatoes country-style, such as Simply Potatoes or leftover mashed potatoes
  • 1/8 teaspoon freshly ground black pepper

    Preheat broiler.

    Cook beef in a large nonstick skillet over medium-high heat until browned, stirring to crumble. Add vegetable mix, tomatoes, and tomato sauce. Cook 5 minutes, or until mixture is slightly thick and thoroughly heated, stirring occasionally.

    While beef mixture cooks, cook potatoes according to package directions. Spoon beef mixture into an oven-safe casserole. Top evenly with potatoes. Sprinkle with pepper.
