- 1 c. sliced carrots
- 1 small diced onion
- 4 oz. cooked lean stew beef
- 3 c. low-fat beef gravy
- 3 c. dry potato flakes
- 1/2 c. fat free sour cream
- 1 c. skim milk
- 2 egg whites
- 1/4 tsp. salt
- 1 Tbsp. Parmesan
- paprika
Directions

1Boil vegetables in 1/2 cup water until tender.

2Drain and add beef and gravy.

3Pour into casserole dish.

4Beat egg whites with salt until stiff.

5Beat flakes, sour cream and milk.

6Fold in egg whites.

7Spread over beef mixture.

8Sprinkle cheese and paprika over top.

9Bake at 400° for 25 minutes.
