Shepherd’S Pie Stew

- 1 pound Ground Beef
- 8 whole New Potatoes
- 1 whole Onion, Chopped
- 1 can (15oz) Carrots
- 1 can (15oz) Corn
- 1 can (15oz) Peas
- 1 cup BBQ Sauce
- 2 cups Chicken Broth
Directions

1In a large skillet or saucepan, start browning beef over medium-high heat.

2Meanwhile, wash potatoes and pierce with a fork. Microwave on high for 5-8 minutes, or until tender. Set aside to cool (be careful - they're HOT!).

3When beef is almost finished browning, add onion. Cook until tender. Turn heat down to medium and add carrots, corn, peas, and potatoes. Stir the BBQ sauce into the meat mixture, and salt and pepper to taste. Stir in the broth and turn the heat to high. Bring to a boil, reduce heat and simmer for 15 minutes.
