Sherry Cheese Sauce

- 2 c. skim milk
- 1/8 tsp. salt
- 1/2 tsp. dry mustard
- 1/4 tsp. ground red pepper
- pinch of nutmeg
- 2 Tbsp. cornstarch
- 4 Tbsp. sherry
- 3 oz. Gruyere cheese, grated (about 3/4 c.)
Directions

1In medium saucepan, over high heat, combine milk, salt, mustard, pepper and nutmeg.

2Bring to boil.

3In a small bowl, combine cornstarch and sherry; stir until well blended.

4Stir cornstarch mixture into saucepan mixture.

5Reduce heat to low and cook until thickened.

6Remove from heat and stir in cheese.

7Serve over vegetables.
