Shiitake Spinach Udon

- 4 cup water
- 3/4 cup dried bonito flakes
- 1/4 cup soy sauce
- 1 tbsp sugar
- 4 spinach
- 2 packages Japanese udon noodlew
- 6 shiitake mushrooms (soaked)
Directions

1Bring water to boil; reduce heat and add the dried bonito flakes.

2Simmer for 15 minutes, strain; save the stock and heat pot.

3Throw out flakes.

4Add soy sauce and sugar to the stock.

5Slice shiitake mushrooms.

6Add to the heated stock, along with the mushroom soaking liquid.

7Cook for three minutes.

8Add noodles ; cook for 2 minutes.

9Put in the spinach and cook for about 1 minute.

10Serve in two large bowls
