Shiitake Spinach Udon

Ingredients

  • 4 cup water
  • 3/4 cup dried bonito flakes
  • 1/4 cup soy sauce
  • 1 tbsp sugar
  • 4 spinach
  • 2 packages Japanese udon noodlew
  • 6 shiitake mushrooms (soaked)

Directions

    Bring water to boil; reduce heat and add the dried bonito flakes.

    Simmer for 15 minutes, strain; save the stock and heat pot.

    Throw out flakes.

    Add soy sauce and sugar to the stock.

    Slice shiitake mushrooms.

    Add to the heated stock, along with the mushroom soaking liquid.

    Cook for three minutes.

    Add noodles ; cook for 2 minutes.

    Put in the spinach and cook for about 1 minute.

    Serve in two large bowls
