- 3 bone-in beef short ribs (about 1 1/2 pounds)
- 2 tablespoons 321 Spice Blend, recipe follows
- 3 cups granulated garlic
- 2 cups ground black pepper
- 1 cup salt
Directions

1Preheat the smoker to 225 degrees F.

2Trim the excess fat off the meat.

3Coat the ribs with the 321 Spice Blend on all sides.

4Place the ribs in the smoker over indirect heat until brown on all sides, 1 hour 30 minutes to 2 hours.

5Place the meat on a wire rack set over a deep pan filled with 2 inches of water.

6Tightly wrap the pan with foil.

7Return the pan to the smoker over indirect heat and cook until the ribs are very tender, about 4 hours.

8Remove from the smoker and plate to serve.

9In a large mixing bowl, add the garlic powder, black pepper and salt and mix until combined.

10Yield: 6 cups
